A generic term that refers to all food products that maintain their qualitative characteristics (flavour, smell, colour, consistency, microbiological profile) almost unaltered for several months when stored at room temperature. Examples include baked goods (cookies, crackers, toast, packaged pastries), vegetable preserves ( tomato sauce, canned vegetables, jams and jellies), dry products (flour, coffee, tea, sugar, pasta), UHT milk beverages, fruit juices.

Termine generico riferito a tutti i prodotti alimentari che mantengono le loro caratteristiche qualitative (sapore, odore, colore, consistenza, profilo microbiologico) pressoché inalterate per diversi mesi a temperatura ambiente. Alcuni esempi: prodotti da forno (biscotti, cracker, fette biscottate, dolci confezionati), conserve vegetali (passata di pomodoro, verdure in scatola, marmellate), prodotti secchi (farina, caffé, tè, zucchero, pasta), latte UHT, bibite, succhi di frutta.
