A plant that is used for the thermal pasteurization. In the case of non-packaged food products, the plant includes a heat exchange unit that is either a tube (single, double, triple or bundle, a swept surface), or a plate. In all cases the heat exchange occurs between the liquid to be pasteurized and the pasteurizing medium (hot water or condensed steam) that is pumped through the heat exchange tubes or plate. Pasteurization can be implemented also on packaged products. In this case tunnel pasteurizers are used (also called *rain pasteurizers*) that are a type of tunnel through which the packaged product passes and is sprayed with water that increasingly becomes hotter. In the final section of the pasteurizer, the product is cooled.
